Base Genep – The Balinese Basic Seasoning

Have you taste chicken betutu during spent your holiday in Bali? Do you know what the name of the sauce in chicken betutu? It called Base genep. This sauce is a sacred combination of spices and other select ingredients ground together to create a unique aroma, taste, and colour. Balinese people called it be “ multi –flavored sauce” because it is be the essence of many traditional dishes such as Balinese satay, smoked duck, and Suckling Pig. It is simple to make and can be stored in the refrigerator up to one week.

base-genepThe ingredient to make Base Genep :
o 1 tsp whole black pepper
o 2-3 candlenut
o 3 cloves garlic
o 1 tsp coriander seeds
o 5 onion shallots
o 2 tbsp. fresh turmeric
o 8 red chilli (seeds removed)
o 5 tbsp galangal
o 2 stick lemon grass
o 3 tsp kencur (kaempferia galanga)
o ¼ tsp freshly ground nutmeg
o 1 ½ tbsp ginger
o ½ tsp shrimp paste
o ¼ cup water

photoYou must grind the spices into fairly fine paste making sure all the gingers and are bruised and smooth. Only the chilli should be recognizable. Grind the whole seeds in a mortar and pestle first. Blend all the ingredients together in a food processor, adding water if necessary. Sometime, Balinese people chopped the all spices until small size and called by “Ngerajang”. The Base Genep should be fragrant. You must sauté it until deep golden-yellow and of a thick paste like consistency. To store cover with a thin spread of oil and plastic wrap and store in refrigerator.
